Cranberries are one of my favorite berries to add to a dish nearing the Holiday season. They instantly add a deep, red, and vibrant color to a plate, reminding me of the holiday season ahead.

If you love cranberries, this recipe has been developed with you in mind. The chicken salad is filled with dried cranberries and topped with shredded apples. It is the perfect lunch recipe to get into a Holiday mood.

If you plan on eating this chicken salad as a sandwich, you can easily use half a serving of chicken salad. Decreasing the quantity used will also reduce the SmartPoints value of this recipe. Ingredients

  • 3 Skinless, Boneless Chicken Breasts poached, then cubed
  • ¼ cup Mayonnaise made with Olive Oil
  • ¾ cup Plain Fat-Free Greek Yogurt
  • 2 teaspoons Dijon Mustard
  • 1 teaspoon Salt
  • ¼ teaspoon Ground Pepper
  • ½ cup Dried Cranberries (reserve 2 tablespoons for garnish)
  • 1 cup Celery chopped
  • 2 Green Onions chopped
  • 1 cup Apples Grated – Garnish

Instructions

  • In a small bowl, mix the mayonnaise, the greek yogurt, dijon mustard, salt, and pepper.

  • In a large bowl, mix the dried cranberries (on which you need to reserve 2 tablespoons for garnish), the chopped celery, green onions, and the cubed chicken.

  • Add the mayonnaise mixture to the chicken salad mixture. With a wooden spoon or a spatula, stir until combined.

  • Garnish with ⅙ cup of a freshly grated apple and 1 teaspoon of dried cranberries, over lettuce, or as a sandwich.

Yields: 6 servings of 2/3 cups

You can serve it over lettuce or as a sandwich.

If you are serving it as a sandwich, you can use 1/3 cup per serving. This recipe would yield 12 servings with 4 SmartPoints on the Weight Watchers green plan and 2 SmartPoints on the blue and purple plan
